250 g d&#8217;amandes<br />
200 g de beurre<br />
1.5 kg d&#8217;oignons<br />
1 cuillère à café de poivre<br />
1 cuillère à de safran<br />
persil plat, sel<br />
Dans une cocotte, placer les pigeonneaux avec 1 oignon émincé, les amandes le beurre et le safran, une pincée de sel, puis arroser d&#8217;un verre d&#8217;eau. Cuire à couvert une trentaine de minutes, en retournant de temps en temps les pigeonneaux. Les retirer, en vérifiant la cuisson. Ajouter à la sauce le reste des oignons émincés, et 2 cuillère à soupe de persil haché. Bien mélanger. Quand les oignons sont cuits, rectifier l&#8217;assaisonnement. Napper les pigeons et servir chaud.<br />
